Tapioca and Taro pudding (Chè khoai môn bột báng)

(10 portions)

1 ½ lbs fresh peeled taro
½ cup (90g) tapioca pearls
1 cup (200 g) sugar
¼ tsp salt
3 cups (720 ml) water
½ tsp vanilla

Thickened coconut milk:
1 13.5-oz (400ml) coconut milk
1 tsp tapioca flour
2 tbsp (30g) sugar
¼ tsp salt
